Peanut oil for frying
Preparation
For the Batter
Using a whisk, whip the egg whites with the sugar until light and frothy, about 10 minutes.
Add the potato starch and glutinous rice flour, mixing well.
For the filling
Shape the durian pulp into small balls, each weighing about 30 grams, and freeze them for 1-2 hours.
Fry
Heat the oil in a pan to 160°C.
Bread the frozen durian balls in the prepared batter.
Gently fry the balls in hot oil until golden brown.
Remove from the oil and dust with icing sugar before serving.
